Victory Brewing Company: Deland’s January Brewery of the Month

Ron Barchet and Bill Covaleski opened Victory Brewing Company to the public on Feb. 15, 1996. What was once a Pepperidge Farm factory became home to a 144-seat restaurant, 70-foot-long bar and a full-scale brewery. In its first year, Victory Brewing Company brewed 1,725 barrels of beer.

Victory is one of only a few breweries in the country that uses whole flower hops. While almost all other breweries used pelletized hops, Bill and Ron insist on using the whole-flower varieties. This unprocessed form of hops imparts better flavor and aroma to beer.

Victory’s craft beer selections, such as the mythical HopDevil® is bold, spicy and menacingly delicious. Golden Monkey is a magical, mystical Monkey whose golden soul glows with the wisdom of the ages. This warming, flavored ale is rich in the spirited tradition of Belgian-inspired brewing. Headwaters Pale Ale is firmly crisp and aromatically arousing pale ale integrates a softly supportive malt base which underlies streams of herbal hop complexity. Shifting impressions of lemon aroma and flavor intermingle with leafy, tea-like earthiness as the flowing appeal of American hops unfolds in Headwaters. Victory Lager is a perfectly balanced, authentic version of a German hells-style lager that satisfies gloriously.
